Makes 3 small or 2 large loaves
3 eggs
2 1/2 cups sugar
2 cups zucchini, peeled, seeded & grated
1 cup oil
3 tsp vanilla
Mix well, then add:
3 cups flour (a bit more for high altitude)
1 tsp salt
1 tsp soda
1/4 tsp baking powder
3 tsp cinnamon
Mix well, then add:
1 cup chopped nuts
Bake at 350 for 1 hour
